Each month I like to feature some of the best Paleo recipes that I’ve come across while doing routine readings and share them all with you. This month: citrus-bacon Brussels sprouts salad, sweet potato and wild salmon hash, chicken and spinach alfredo, pumpkin spice skillet brownie, and easy pumpkin pie cake in a mug. All recipes are Paleo friendly. Enjoy!
Citrus-Bacon Brussels Sprouts Salad
Ingredients:
- 8 strips bacon, cooked, and crumbled
- 1 small shallot, minced
- 1lb Brussels sprouts, shaved
- 1/2 cup EVOO
- 1/3 cup dried cranberries
- 6 T orange juice
- 3 T lemon juice
- 1/2 t sea salt

Sweet Potato and Wild Salmon Hash
Ingredients:
- 2 white sweet potatoes, steamed and mashed
- 3 T melted coconut oil
- 4 in. white of 1 medium leek, thinly sliced
- 1 small fennel bulb, thinly sliced,
- 4 oz (4 large) brown mushrooms, thinly sliced
- 2 large cloves garlic, minced
- 3/4lb fillet wild sock-eye salmon, skin on
- 1/2 small radicchio, thinly sliced
- generous pinch sea salt
- lemon zest
- 2 T chopped chives
- 3 T chopped curly parsley
- chopped fennel fronds to serve
- lemon juice to serve

Chicken and Spinach Alfredo
Ingredients:
- 2 boneless chicken breasts
- 2 T avocado oil
- 1/4 cup grass fed butter
- 1 clove garlic, finely chopped
- 3/4 cup whole cream
- 1/2 grated Parmigiano-Reggiano cheese
- 2 T creme fraiche
- 2 oz baby spinach
- zucchini for noodles
- fresh basil for garnish

Pumpkin Spice Skillet Brownie
Ingredients:
- 2 large eggs
- 4 T pumpkin puree
- 3 T coconut sugar
- 4 T coconut oil
- 2 T coconut flour
- 4 T cacao powder
- 1 T pumpkin spice
- 1/2 t baking soda
- 1/4 t salt
- 2 T dairy-free chocolate chunks

Easy Pumpkin Pie Cake In A Mug 
Ingredients:
- 1/2 cup almond flour
- 1/2 t aluminum free baking powder
- 1 t pumpkin pie spice
- 4 T organic pumpkin puree
- 1/2 t vanilla extract
- 2 t real maple syrup
- 1 large egg
