Each month I like to feature some of the best Paleo recipes that I’ve come across while doing routine readings and share them all with you. This month: bacon guacamole with cheddar chips, mini s’mores cookie cups, peach cobbler, spiraled sweet potato with egg in a hole, and pan fried duck breasts with cinnamon spiced cherries. All recipes are Paleo friendly. Enjoy!
Bacon Guacamole With Cheddar Chips
Ingredients:
- 3 cups grated cheddar cheese
- 2 strips bacon
- 1 t lime zest
- 2 T lime juice
- 1 small shallot
- 1 small garlic clove
- 1 jalapeno
- 2 T cilantro
- 1/4 t salt
- 4 ripe avocados

Spralized Sweet Potato Egg In A Hole
Ingredients:
- 1 T extra virgin olive oil
- 1 1/2 cups sweet potato, spiralized
- 1/2 bell pepper cut into strips
- 1/2 t turmeric
- 1 egg
- salt and pepper to taste
- chopped green onions (optional)

Pan-Fried Marinated Duck Breasts with Cinnamon Spiced Cherries
Duck Breast Ingredients:
- 3-4 Peking duck breasts
- 1/4 t ground cinnamon
- 2 cloves garlic
- 1 T avocado oil
- 2 T coconut aminos
- 1 t ume plum vinegar
- 1 T balsamic vinegar
- 2 t maple syrup
Cherries Ingredients:
- 1 T avocado oil
- 2 shallots, finely chopped
- 3/4 lb cherries
- 1 large cinnamon stick
- 1 T balsamic vinegar
- 1/2 cup chicken bone broth
- pinch fine sea salt

Paleo Peach Cobbler
Ingredients:
- 8 cups peaches
- 3/4 cup coconut sugar
- 1 T arrowroot flower
- 1 T lemon juice
- 1/2 t pure vanilla extract
- 2 t cinnamon sugar cookie blend
- 1 cup cassava flour
- 1/2 cup blanched almond flour
- 1/4 cup potato starch
- 1 t baking powder
- 1/2 t Himalayan pink salt
- 3/4 cup unsalted butter
- 1/4 cup water
- 1 whole egg
