Each month I like to feature some of the best Paleo recipes that I’ve come across while doing routine readings and share them all with you. This month: apple cinnamon oven pancakes, tomato, basil, and ricotta flatbread, calamari summer salad, chicken chow mein, salmon with pistachio pesto, and dark chocolate orange chia pudding. All recipes are Paleo friendly. Enjoy!

Paleo Apple Cinnamon Oven Pancakes

Ingredients: 

  • 6 eggs
  • 1 1/2 cups coconut milk
  • 1/2 cup coconut flour
  • 1 t vanilla
  • 1 t cinnamon
  • 1/2 t sea salt
  • 1 T 100% pure maple syrup
  • 2 apples (any kind will do)
  • 4 T oil of your choice

Tomato, Basil, and Ricotta Flatbread 

Ingredients:

  • 1 cup blanched Almond flour
  • 3/4 cup Cassava flour
  • 1/4 cup Potato starch
  • 1/2 t Himalayan Pink Salt
  • 2 t Primal Palate Garlic and Herb Seasoning
  • 1 t raw sugar
  • 1 T active dry yeast
  • 1 cup warm water
  • 3 T EVOO
  • 1 cup cherry tomato
  • 1/2 cup fresh basil, sliced
  • 1/2 cup dairy-free ricotta

Calamari Summer Salad

Ingredients:

  • 4 red radishes, sliced very thin
  • 1 small zucchini , sliced very thin
  • 1 small yellow summer squash, sliced very thin
  • 1/2 fennel bulb, sliced very thin
  • 3 t red wine vinegar
  • zest of one lemon
  • 1 t minced shallot
  • 1/2 cup plus 1 t olive oil
  • 12 oz. squid, sliced into rings, tentacles left whole
  • 12 kalamata olives, sliced in half
  • 1/2 cup chopped, fresh parsley, basil, and chives
  • sea salt, to taste

Chicken Chow Mein 

Ingredients:

  • 1 lb boneless, skinless chicken thighs, cut into bite sized pieces
  • 5 T avocado oil
  • 2 t coconut aminos
  • 1 t aged balsamic vinegar
  • 1 t fish sauce
  • 1/2 t toasted sesame oil
  • 2 t arrowroot powder
  • 1 lb. white fleshed sweet potato or 6 medium carrots
  • kosher salt
  • 1 small yellow onion
  • 1/4 lb. shitake mushrooms
  • 1 inch piece ginger
  • 2 scallions
  • 5 oz. baby spinach
  • 1/2 t crushed red pepper flakes

Salmon with Pistachio Pesto

Ingredients: 

  • 1 1/2 lbs. salmon filet, cut into four pieces, seasoned with salt
  • 1 T avocado oil
  • 1 cup raw pistachios
  • 1 small garlic clove
  • 1 t lemon zest
  • 2 heaping T chopped or finely sliced basil
  • 1/2 cup EVOO

Dark Chocolate Orange Chia Pudding

Ingredients: 

  • 1/3 cup chia seeds
  • 3 T raw cacao powder
  • 1/4 orange juice
  • 1 T orange zest
  • 1 T honey (or pure maple syrup)
  • orange peel (for garnish, optional)
